Carrot & Ginger Soup

Carrot & Ginger Soup? Yes!!

Baby, it’s cold outside. Must start by saying that I’ve been sick since last week. Although I am training for the half marathon, the fever, cough and sore throat are still with me. Apart from drinking/eating soup every day, I’ve “discovered” some very delicious recipes for Hot Chocolate and a Healthy Fruit Cake that will be posted later on the blog.

But today’s post is about a miracle soup. Honestly, this is probably the most amazing carrot & ginger soup ever discovered by human kind. *drum rolls* You can’t eat it without releasing a calm chorus of “mmmmm…”

What you need:
  • 4-5 Carrots, medium to large
  • 1 Onion, large
  • 6 cloves Garlic
  • 1/4 cup Ginger, fresh
  • 1 tbs Turmeric powder
  • Salt & Pepper to taste
  • 1 Onion, large
  • 1 Tomato, large
  • 2 tbsp Orange, zest
  • 2-3 cups of vegetable broth or simply boiled water
  • 2 tbs olive oil

How to make it:

  1. Chop the carrots, dice the onion, add a sprinkling of pepper and salt and a drizzle of olive oil and place them in a large pot. Sauté until tender, about 4-5 minutes.
  2. Add the ginger, turmeric and the diced tomato and sauté for another 3 minutes before adding the broth. Stir in the orange zest.
  3. After adding the broth or boiled water, let it boil until carrots are tinder.
  4. Puree the soup.
  5. Serve in bowls and add toppings as you prefer.

My preferred toppings for this carrot & ginger soup:

  • Yoghurt
  • Pumpkin Seeds
  • Walnuts

And don’t forget to add a piece of toast on the side.
